How to reduce restaurant food costs in 2027: 10 strategies and a plan for the new year
By Asaad Al Hashmi, Founder and CEO of Wady

To cut food cost in 2027, set a target for every dish, re-cost your recipes on January 2027 prices, tighten how you buy from suppliers, and close every month by comparing actual cost with expected cost. The 10 strategies below follow a calendar from December 2026 to December 2027.
We are Wady. We make Wady Central, the inventory, recipe and purchasing system for kitchens in Qatar, and the free Wady Purchase System, so the last part of this guide shows where they help.
Food cost ranges come from public industry guides, linked where we use them. Worked numbers are round examples, not customer data.
It is late December. The owner of a restaurant group opens the year's supplier invoices and sees that food cost crept up two points. No single decision caused it: a few price rises, a few extra grams on the plate and some expired stock added up, week by week.
Key takeaways
Food cost rises through small leaks, so a 2027 plan sets a target per dish and checks it on a fixed calendar.
Industry guides put a healthy food cost at about 25% to 35% of food sales, and your own costed recipes set the target for each dish and branch in 2027.
Two points of food cost on QAR 150,000 of monthly food sales is QAR 3,000 a month, or QAR 36,000 across 2027 (example numbers).
Nobody can promise 2027 prices, so check every delivery against the last price you paid and re-cost the same day.
Groups with a central kitchen count each transfer once, confirm every run to a branch, and close each month on actual against theoretical food cost.
Why does food cost need a plan for 2027?
Nobody can promise 2027 prices, so a food cost plan has to react to prices on every delivery and rest on targets from your own recipes. A plan written in December 2026 gives you the numbers to react against.
Four public sources frame the pressure.
Healthy range: US industry guides put a healthy food cost at about 25% to 35% of food sales: WebstaurantStore says 25% to 35%, and Eat App says 28% to 35%.
Waste: UNEP's Food Waste Index 2024 says food service makes 28% of the food wasted worldwide.
Qatar: the National Food Security Strategy 2030 sets national targets to cut food waste, explained in our guide to Qatar's food security strategy 2030.
GCC benchmark: none is published, so your own costed recipes set the target.
Your menu mix decides your number.
What is two points of food cost worth in 2027?
Two points of food cost are worth QAR 36,000 across 2027 for a restaurant selling QAR 150,000 of food a month at 33% food cost. The numbers below are an example, not customer data.

Example numbers: a restaurant that moves from 33% to 31% food cost on QAR 150,000 of monthly food sales saves QAR 3,000 a month, or QAR 36,000 across 2027.
Food sales a month: QAR 150,000.
At 33%: QAR 49,500 on food.
At 31%: QAR 46,500 on food.
Saved: QAR 3,000 a month, which is QAR 36,000 across 2027.
For the formula behind the percentage, read how to calculate food cost and recipe cost.
What are the 10 strategies to reduce restaurant food costs in 2027?
Ten strategies cut restaurant food cost in 2027: dish targets, January re-costing, a supplier review, delivery price checks, scheduled ordering, calendar planning, menu engineering, portion and waste control, central kitchen planning and a monthly close. Each has a date or rhythm, the leak it closes and a check.
1. Set a 2027 food cost target for every dish and every branch
A dish target comes from its costed recipe and menu price. A branch target comes from that branch's own menu mix, because a group average hides the branch running high. Write both down in December 2026, so every price, portion and supplier decision in 2027 has a number to hit. See food cost and margin for each dish.
Do it by: 31 December 2026, then revisit each quarter.
What it saves: the leak of dishes that sell at a margin nobody chose.
Check: every active dish and every branch has a written target.
2. Re-cost every recipe on January 2027 supplier prices
A recipe costed in 2026 carries 2026 prices. Re-cost each one on the prices you hold in January 2027, on usable yield after trim, with sauces, sub-recipes and packaging in the sum, before you reprint the menu. See recipe yield and trim loss and recipe costing software.
Do it by: the first two weeks of January 2027.
What it saves: the gap between the cost your menu assumes and the cost you pay.
Check: every active dish shows a cost per portion dated January 2027.
3. Review your supplier list for 2027
Compare two suppliers for each big category, so you hold a price to measure against and a second source. Ask each supplier for a 2027 price list in writing and for how long each price holds, and agree delivery days and minimum orders at the same time. See wholesale food suppliers in Qatar.

A delivery checked against the order and the agreed price list is the moment a price change shows up in your kitchen.
Do it by: price lists requested in December 2026, suppliers compared by end of January 2027, then each quarter.
What it saves: the leak of buying from one source at whatever price arrives.
Check: every big category has two quotes and a written price hold period.
4. Catch every price change on delivery and re-cost the same day
Compare each invoice line with the last price you paid. When a price moves, re-cost the recipes it touches that day, then choose a new menu price, portion or supplier. See what to do when a supplier raises a price and the goods receiving procedure.
Do it by: every delivery in 2027.
What it saves: price rises that reach your plate cost unseen and surface at month-end.
Check: this week's price changes and the recipes each one touched.
5. Order on a fixed schedule from par levels and real demand
A par level is the quantity you want on the shelf after a delivery. Count, order the gap on set days, and fewer orders go out as emergency buys at retail prices. See automated purchase orders and why restaurants over-order.
Do it by: par levels set in January 2027, reviewed each quarter.
What it saves: over-ordering that turns into waste, and rush buys at higher prices.
Check: emergency orders and binned items this week.
6. Plan the 2027 calendar peaks into orders and prep
Ramadan falls in February and March 2027, followed by Eid. Summer slows trade, and National Day in December brings a rush. Give each peak a date, a menu and a buying quantity. See Ramadan food waste in Qatar.
Do it by: Ramadan in January 2027, summer in May 2027, National Day in November 2027.
What it saves: stock bought for a rush that arrives smaller than planned.
Check: after each peak, planned quantities against used quantities.
7. Engineer the 2027 menu
List every dish with cost, price and food cost %. For each dish over target, change the price, portion, supplier or recipe, or take the dish off. Shared ingredients across dishes keep fewer items in stock. See menu pricing from food cost.
Do it by: the first menu review in January 2027, then every quarter.
What it saves: dishes that sell below target margin, and slow ingredients that expire.
Check: dishes over target this month, and what you did about each.
8. Weigh portions and record every waste with a reason
Put a scale at the station for your top dishes and weigh five portions of each every week. Write down what goes in the bin, how much and why. Give each shift one weekly waste number to own. See how to track food waste and how to measure food waste.
Do it by: scales and waste form in place in January 2027, numbers read weekly.
What it saves: the extra grams on every plate and the bin cost with no recorded cause.
Check: waste by reason and by item, each week.
9. For groups: centralise prep and confirm every transfer
If you run several outlets, prepare shared items in one central kitchen. Plan production from all outlet orders minus stock, and confirm every transfer to a branch. See what is a central kitchen and the daily production plan.
Do it by: production planned every day in 2027, open runs chased every day.
What it saves: over-production, and transfers that nobody confirmed.
Check: open runs older than one day, with their value.
10. Close every month on actual against theoretical food cost
Compare what your shelves lost (actual) with what your recipes say they should have lost (theoretical), per branch. Chase the biggest item gaps first, and review targets, suppliers, menu and par levels each quarter. See theoretical vs actual food cost and month-end COGS reconciliation.
Do it by: the first week of every month in 2027, and a plan review at the end of March, June, September and December 2027.
What it saves: the unexplained gap made of waste, over-portioning and typing errors.
Check: the gap in riyals and in points, against last month.

What should your 2027 food cost calendar look like?
A 2027 food cost calendar starts in December 2026 with targets and supplier price lists, and then repeats a weekly, monthly and quarterly rhythm all year.

The 2027 food cost plan: targets and supplier price lists in December 2026, re-costing in January 2027, then weekly, monthly and quarterly checks.
December 2026
Set targets per dish and branch (strategy 1).
Ask suppliers for 2027 price lists (strategy 3).
January 2027
Re-cost every recipe (strategy 2).
Fix dishes over target (strategy 7).
Set par levels (strategy 5).
Every week
Check prices on delivery (strategy 4).
Count the costly items.
Review waste (strategy 8).
Every month
Compare actual with theoretical food cost per branch (strategy 10).
Every quarter (end of March, June, September and December 2027)
Review suppliers (strategy 3) and the menu (strategy 7).
What tools help reduce food cost in 2027?
A spreadsheet works for one site with stable prices and one person typing. Four signals say you have outgrown it:
More than one site. Two files drift apart.
Prices that move weekly. Each change means editing recipes by hand.
More than one person typing. One wrong digit, such as 336 typed as 0.336, runs for a month.
A month-end that takes days. Closing the month takes longer than counting.
Read spreadsheet or software for restaurant inventory before you decide.
Where does Wady help you cut food cost in 2027?
Wady Central is the inventory, recipe and purchasing system built in Qatar for kitchens of any size, from one cafe to a group with a central kitchen and branches. Every riyal in your kitchen, explained.
Over 100 businesses in Qatar use Wady, including Crave Holdings and OMC. Each strategy maps to a feature:
Strategies 1, 2 and 7, targets and re-costing: recipes are costed on usable yield after trim, with sub-recipes, packaging and food cost %. Your costing sheet imports as it is, and recipes are re-costed the moment a price moves.
Strategy 4, prices on delivery: price rises and falls are flagged on delivery, and you confirm what arrived instead of typing it.
Strategies 3 and 5, suppliers and ordering: suppliers can be on Wady or not, and a purchase order goes by email to those who are not. The purchase list is built from the production plan.
Strategy 9, central kitchen: all outlet orders sit on one sheet, and production is planned from real orders minus stock. Every run has a signable delivery note, outlets confirm arrival in the same app, and shortages and returns carry their value.
Strategy 8, waste and counts: a shift's waste goes in as one entry with your reasons, and waste cost shows by period, reason and item. You count in sacks and grams, and blank means not counted.
Strategy 10, the monthly close: the Daily Brief arrives each morning, costed in riyals, naming which recipes moved cost and which ingredient caused it. Month-end balances per item, and you can export all your data any day, free.

An example screen: the price changes view in Wady Central lists every rise and fall found at receiving, with the recipes each one touches.

An example screen: the Daily Brief in Wady Central lists what looks wrong and which recipes moved cost, priced in riyals.
What it does not do
Wady Central has no POS API connection yet, so it works alongside your POS. It is English only today. It does not run your accounting.
The free option
The Wady Purchase System lets any restaurant, cafe, hotel or catering kitchen in Qatar order from all its suppliers in one app for free (order.wady.ai, App Store and Google Play), and it records what arrived and at what price. For Wady Central, see pricing. Outside Qatar, the strategies in this guide apply to you, and Wady is not available there yet.
